Certificate III in Commercial Cookery

The Certificate III in Commercial Cookery is a qualification covering the knowledge and skills to work in the commercial cookery and dining department, safely working in a kitchen, using kitchen equipment to prepare a variety of food types and planning and costing recipes.

This qualification covers the knowledge and skills required to follow hygiene procedures, handle food safely, use and clean kitchen equipment and support and seek improvement of sustainable work practices. Prepare and present sandwiches, cheese, appetisers and salads, stocks, sauces and soups, vegetarian and vegan, poultry, meat, and seafood dishes. Select and prepare ingredients, follow standard recipes and make food quality adjustments, and decorate and present cakes, pastries, breads, and desserts. Identify customer profile and food preferences of customer base, plan dishes to meet organisational style and customer preferences, cost recipes, write dish descriptions and evaluate and adjust recipes based on feedback and profitability.
